Here's how you do it

  • Soak the lentils in water for 30 minutes or overnight if possible
  • Heat the olive oil in the pan
  • Rinse the lentils and add them to the onions. Sauté together for 5-6 minutes
  • Add spices, spinach leaves (with no stems), and water. Bring the mixture to a boil and then let them simmer for 10 minutes
  • After 10 minutes the lentils should have soaked up the water. Add the milk powder and let them cook together for 4-5 minutes
  • Turn off the heat and blend the mixture.
  • Offer the lentil curry with lemon and a side of quinoa or rice
